We will be kicking off our next menu in time for Earth Hour on March 27th.
We are a member of Chef's Collaborative, which is a national organization of professional cooks devoted to locavore principles. This year CC members are teaming up nationwidewith Organic Valley to design some special menus using sustainable products.
Our team is working on a menu
using products grown by local and regional farmers. Because of our climate here in Northern Minnesota, this will primarily mean meat and dairy products. But we will be growing our own sprouts plus using tomatoes and red, yellow and orange peppers from Bay Produce in Superior and some root cellar produce from last year's season.
Additionally, we will be showing some ecology themed movies throughout the month from the following list:
The Man Who Planted Trees
Lake Invaders: The Fight for Lake Huron
The Age of Stupid
Borderland: Sea Kayaking Croatia
Car of the Future
Global Warming: What's Up with the Weather
Additionally, the Duluth Community Garden Program will be showing
a series of lectures about the Ringing Cedars of Russia.
